I used a round pizza pan for my nachos. Preheat oven to 350 degrees F.

 

Set out a layer of chips.

 

Sprinkle with beans. I used drained and rinsed black beans.

 

Sprinkle with chopped black olives

 

Next layer is chopped red onion

 

Add a layer of fresh chopped tomatoes. Tomatoes are actually even better for your health when roasted. Cooking them brings out more of the cancer fighting lycopene or helps your body absorb it more efficiently! 

 

Add a thick layer of cheddar cheese

 

Take a look at your nachos. Are they even? Spread everything around so that every bite is going to be delicious. 

 

Pour leftover enchilada sauce evenly over the top of the nachos (I had about 8 ounces in my can leftover from making enchiladas last week).

 

Put into oven and cook for 15 minutes.

 

Enjoy with avocados, salsa, and sour cream or plain yogurt.
