- 1 large apple
- 4 small chicken breasts
- 1/4 cup sliced almonds
- 1 TBLs sesame seeds
- 1/2 cup olive oil mayonnaise
- dash of lemon pepper
- 1/2 tsp. curry powder or turmeric
- 1/4 cup raisins
- 1/2 cup chopped celery
I prepare every meal for my family of 3, every day. Packing lunch boxes with dinner leftovers does get boring sometimes and reheating soups and casseroles is a lot of work when you are at a desk and starving. So occasionally I actually make a different lunch food. We don’t do sandwiches, or I should say my husband doesn’t like sandwiches, so I don’t bother with them. Salads are nice because they are ready when you are hungry, no microwaving required, and are as varied as the cities on this planet. But they do take a bit of time to prepare. Eh, anyway, I had some time, so I made this yummy salad for lunch one day this week. Too bad it only lasted for one meal, it was great!
Bake the chicken breast with a dash of salt, pepper, and curry or turmeric on them until done. About 45 minutes at 325 all in one lidded baking dish. Let them cool, then chop them up into small bite-sized pieces.
Enjoy in a bowl with bread or crackers on the side as we did, or eat between bread as a sandwich.
