- 1 large beet
- 2 medium apples
- 5 carrots
- 1 teaspoon balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
What I love most about this salad is the color! I adore this combination of colors. So bright, fun, beautiful, and natural. My camera doesn’t quite capture the intense boldness of these plants. But colors aside, I do love this flavor combination too. When I am juicing things in my awesome juicer, apple carrot beet is, in fact, my favorite combination. It is sweet, sour, and earthy; very satisfying.
I began by washing and peeling the carrots and beet. I left the apple peel on. I trimmed the ends and cored the apples. I used my large Cuisinart food processor on the medium shred setting and quickly shred all of the fruit and vegetable. I put it into a large serving bowl.
Next in a small glass dish I measured the olive oil, honey, and vinegar. I heated this for 20 seconds in the microwave so that the honey melted and mixed well with the other two ingredients. I poured this over the shredded vegetables and tossed it all together with tongs.
This salad was delicious! Very flavorful, fresh, clean and filling.
As an option, you could add lemon juice to this and/or mayo and raisins.
This salad is awesome for the following reasons:
It’s sweet AND sour all in one bite.
It packs well for lunches the next day.
It’s quick and easy to make with a 3 year’s old help.
It’s nutrient and fiber dense.
It’s a great way to try beets, for those who may not think they like eating beets. Try them raw! :)
