- 1 pound ground chicken or turkey
- 2 old corn tortillas
- wheat bran-1/4 cup
- quick oats-1/2 cup
- cumin-1/2 teaspoon
- coriander-1/2 teaspoon
- garlic powder-1/4 teaspoon
- onion-one yellow chopped
- ketchup-2 Tablespoons
- mustard-1 Tablespoon
- ranch dressing- 1 Tablespoon
- 2 eggs
- mexican 3 cheese blend- 3/4 cup shredded
- milk-as needed, maybe 1/4 cup
Best. Meatloaf. Ever.
Well I thought so, anyway.
This blended some of my favorite flavors.
Cumin, Coriander (Cilantro’s seed), cheese, corn, chicken.
I made this up in order to use some thawed frozen ground chicken meat.
I was planning to make an ordinary Italian themed meatloaf like I would normally make out of beef, but I saw some stray ingredients in my fridge that needed using up.
Story of my life.
We had 1-2 torn up corn tortillas laying in their baggy in chunks, a little bit of cheese, and the idea was born here. I don’t often have bread crumbs in my pantry. I don’t buy them, so unless I’ve made some, I don’t have them. When making meat balls or meat loaves you can substitute many other starchy things, such as oats, quinoa, rice, etc. So I figured the corn tortillas would work.
I got out my small food processor and blended some chopped yellow onion with the corn tortillas, until it was all in very tiny pieces.
I beat the 2 eggs in a large glass bowl, with a fork and then added the onion mixture, the other binding ingredients (oats and wheat bran), the seasonings, sauces, and last the meat and cheese (all stirred by hand with a fork).
Baked this in a loaf pan for 1 hour 15 minutes at 350 degrees.
It was outstanding/delicious!
