- 1 cup yogurt
- 2 cups cooked pasta
- 2 cups chopped fruit
For a variation to a fruit salad, try adding some cooked pasta. It adds an interesting texture as well as adding some protein and nutrients, forming more of a complete meal. I always use yogurt in my fruit salad, but you can also use whipped cream, sour cream, or your favorite fruit salad dressing. Poppy seeds would be a nice addition to this as well. You can use any kind of pasta you like, but rotini or macaroni are my favorites.
Leftovers are good for a day or two. The bananas will turn brown, and the liquid will separate a bit, so if you are making this for guests, don’t make it a day ahead, make it fresh in the morning.
For the fruit, you can use whatever you have and like. I used some fresh oranges, pears, and strawberries, then added frozen blueberries, frozen pineapple, and pina colada flavored yogurt…this time. The variations are endless.
