This is a long time family favorite of mine. During summer gardening season who doesn’t end up with too many zucchinis? I’m sure this was developed in an attempt to give them some flavor and pizzazz , as they can be watery and bland if steamed or boiled as is.
Choose some squash, any summer type will do.
Slice into rounds.
Layer in a square or rectangular glass baking dish, that has been greased or sprayed with non stick powers.
Spread some mayo on the tops of your rounds.
Sprinkle generously with salt and pepper, fresh or dried parsley, nutritional yeast, Italian seasonings, onion, Parmesan Cheese, cheddar cheese, and bread crumbs.
Bake at 350 for 30 minutes uncovered.
