It’s funny though, during the summer we had SO MUCH yellow summer squash that I started to get very creative with it. I found ways to put it into everything, as most zucchini growers do. So I thought it would be smart to shred and freeze it in 1-2 cup portions, ready for all of these great recipes through out the long winter.
